Summer Cocktails at The Restaurant

Why not try your hand at creating some refreshing summer cocktails. The Restaurant’s mixologist, Adam Robinson, has been busy creating two that are perfect for these warmer days.  Ingredients are listed below so you can create your own.

Royal Hawaiian Colada       

What you will need:                           

  • Glass – Hurricane
  • Blender
  • Scoop of Crushed Ice
  • 25ml sailor jerry rum
  • 25ml Chambord
  • 12.5ml banana liqueur
  • 12.5ml strawberry liqueur
  • 20ml coconut syrup
  • 15ml vanilla syrup
  • 75ml pineapple juice
  • 50ml milk/cream

Blend ingredients until smooth, pour into hurricane glass with a raspberry base and garnish with orange and pineapple leaf.

*Overall presentation will see a pink/purple blend.

 

Sea & Surf

What you will need:                    

  • Glass – Hurricane
  • Build in Boston Glass of ice

1st Stage

  • 75ml pineapple juice
  • 35ml peach schnapps
  • Shake & pour to bottom of glass, holding back the foam till later.

2nd Stage

  • Boston glass of ice
  • 12.5ml blue curacao
  • 6oz lemonade

Using a bar spoon stir anti-clockwise and clockwise to mix thoroughly for 30 seconds. Then, strain the blue mix over the pineapple mix using the back of a bar spoon. Top with crushed ice and pour the pineapple foam over the top.

Garnish with a pineapple wedge flambé with icing sugar.

*Overall presentation should see a distinct two layered cocktail (blue over yellow).
